Southern Fried Chicken

Ingredients 1 whole chicken, cut up (or 8 pieces of your favorite cuts of chicken) 2 teaspoons kosher salt 2 teaspoons garlic powder 2 teaspoons onion powder 2 cups buttermilk 2 Tablespoons hot sauce 2 cup all-purpose flour 1 cup cornstarch 2 teaspoons kosher salt 2 teaspoons paprika 2 teaspoons black pepper peanut oil (for frying) flaked salt (for serving, optional)

Instructions 1. Place 1 whole chicken, cut up in a large bowl. Sprinkle on top of the chicken: 2 teaspoons kosher salt, 2 teaspoons garlic powder and 2 teaspoons onion powder then toss to coat the chicken in the spices. 2. Add 2 cups of buttermilk and 2 Tablespoons hot sauce, stir until everything is combined. Cover with plastic wrap and let marinate in the fridge for at least 2 hours, but it’s best if you can let it sit overnight. 3. In a medium-sized bowl, whisk together 2 cup all-purpose flour, 1 cup cornstarch, 2 teaspoons of kosher salt, 2 teaspoons paprika and 2 teaspoons black pepper. Set aside. 4. Fill up a deep fryer (deep cast iron skillet or dutch oven) with peanut oil (or neutral frying oil of your choice) and preheat to 350°F. 5. Taking the chicken pieces one at a time, let the excess buttermilk drip off. Coat in the flour mixture, make sure the chicken is well coated. Shake off any excess. Set the chicken aside and let it sit for a few minutes until the coating starts to look a little pasty. 6. Carefully add the piece of chicken to the deep fryer and continue with the next piece. Don't add more than three or four pieces at a time. You will need to fry in batches so you do not overcrowd the fryer. Fry until golden brown, turning every few minutes. 7. Chicken is done when golden brown and the internal temperature reaches 165°F. Depending on the size of the chicken, dark meat can take about 12-14 minutes and white meat takes 8-10 minutes (these are estimates - use a meat thermometer for accurate doneness) 8. When the chicken is done frying, place it on a paper towel lined sheet tray and immediately sprinkle a little flaked salt on top. Continue with the rest of the chicken pieces.

Sausage and Egg Breakfast Casserole

Description This Overnight Sausage and Egg Breakfast Casserole is a classic in our house! I’ve been having it on holiday mornings since I was a kid and have carried the tradition into adulthood. Ingredients 6 slices bread, cubed* 1 lb sausage, browned and drained 2 cups shredded cheddar cheese 8 large eggs 2 cups milk 1 tsp dry mustard 1 tsp salt Pepper, to taste

Instructions 1. Spread the bread evenly into the bottom of a greased 9×13 inch baking dish. 2. Sprinkle the sausage and cheese evenly over the bread. 3. In a large measuring cup, combine the eggs, milk, dry mustard, salt and pepper. 4. Pour the egg mixture evenly over the ingredients in the pan. 5. Cover and chill overnight. 6. Prior to baking, preheat the oven to 325 degrees. Bake for 45-55 minutes, or until set. Cover it loosely for the first 30 minutes or so, then bake uncovered for the reminder. You may need to bake it for a little more or less time depending on your oven and how soft or “runny” you prefer the eggs to be. I don’t really like it to be runny, but I also don’t want it to dry out. To check it, use a fork or knife to stick in the middle and see how soft it still is. 7. Remove from the oven when done and serve warm.

Hummingbird Bread Recipe


Description This moist and fluffy Hummingbird Bread is loaded with pineapple and ripe banana! Laced with warm spices and studded with toasted pecans, you’ll love everything about this luscious breakfast loaf. Ingredients 2 cups (260g) all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 cup (56g) unsalted butter, melted 1/4 cup vegetable oil 3/4 cup (168g) packed light brown sugar 2 large eggs 1 1/2 cups mashed bananas (about 3 large ripe bananas) 8 oz can crushed pineapple, with juice 1 tsp vanilla extract 1/2 cup (53g) chopped pecans, toasted

Instructions 1. Preheat the oven to 350°F. Spray a 9×5 loaf pan with nonstick spray and set aside. 2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. 3. In a large mixer bowl, combine the melted butter, oil and brown sugar. 4. Add the eggs one at a time, mixing until just combined before adding the next. 5. Add the mashed bananas and mix until combined. 6. Add the pineapple with juice and vanilla extract and mix until well combined. 7. Add the dry ingredients and mix just until combined. Do not over mix or you’ll end up with tough bread. 8. Gently fold in the chopped pecans. 9. Add the batter to the prepared pan and bake for 60-70 minutes. To test for doneness, a toothpick inserted in the center of the loaf should come out clean. If the loaf starts to brown too much on top, tent it with some aluminum foil. 10. Remove loaf from the oven and let it cool completely in the pan. Slice and serve when ready.
