Fresh Veggie Beef Ragu


Ingredients

12 oz. linguine

1 lemon

2 tbsp. oil

1 lb. lean ground beef

2 cloves garlic

2 tbsp. tomato paste

1/2 c. dry white wine

1 pt. cherry tomatoes

1/2 red onion

Parmesan and basil, if desired


Directions

Step 1: Cook linguine according to package directions. Before draining, reserve 1 cup cooking liquid and set aside. Drain and return pasta to pot.

Step 2: Grate the zest from the lemon directly into the pot. Then squeeze in the lemon juice.

Step 3: Add 1 tablespoon of oil, and toss pasta together. Add reserved cooking liquid if the pasta seems dry.

Step 4: While the pasta cooks, brown ground beef in a large skillet in 1 tablespoon oil, breaking it up into tiny pieces, 6 minutes.

Step 5: Finely chop garlic and stir into pasta; cook for 1 minute.

Step 6: Add tomato paste and cook, stirring, until beef starts to get crispy.

Step 7: Add dry white wine and simmer until it evaporates, 3 minutes.

Step 8: Thinly slice red onion. Cut cherry tomatoes in half.

Step 9: Toss the beef with pasta, cherry tomatoes, and red onion. Sprinkle with Parmesan and basil if desired.

Classic Meatloaf


Ingredients

2 tbsp. ketchup 1 tbsp. brown sugar 1 tbsp. plus 1 tsp reduced-sodium soy sauce 2 large eggs 1 tbsp. balsamic vinegar Kosher salt and pepper 1/2 c. panko 1 small onion, coarsely grated 1/2 c. fresh flat-leaf parsley, finely chopped 1 1/2 lb. ground beef chuck Mixed green salad, for serving Directions Step 1: Heat oven to 375°F. Line rimmed baking sheet with foil. In a bowl, combine ketchup, brown sugar and 1 teaspoon soy sauce. Step 2: In a large bowl, whisk together eggs, balsamic vinegar, remaining tablespoon soy sauce and ½ teaspoon each salt and pepper; stir in panko and let sit for 2 minutes. Add onion and parsley and mix to combine. Step 3: Add beef and mix just until incorporated. Transfer mixture to prepared baking sheet and shape into 9- by 3½-inch loaf. Step 4: Brush loaf with ketchup mixture. Bake until internal temp registers 150°F, 40 to 45 minutes. Let rest for 5 minutes before slicing. Serve with salad if desired.

Spiked Berry Sundae


Ingredients 3 tbsp. margarita 2 tbsp. sugar 1 lb. mixed berries, strawberries cut into pieces Vanilla ice cream, for serving Directions Step 1: In a bowl, whisk together margarita and sugar to dissolve sugar. Step 2: Toss with berries and let sit, tossing occasionally, at least 20 minutes. Serve over vanilla ice cream.
